Since we are interested in saving space, getting meals done efficiently, and getting back to the fishing: we have come up with a gravy short cut! This is the easiest way to make either our sausage gravy for breakfast or our \"SOS\" ground beef gravy for lunch or supper. It involves a little preparation at home before the trip. What I do is cook the sausage or ground beef at home. Just before the meat has finished browning in a skillet on the stove top I sprinkle in flour right on to the meat. I usually start with about a healthy tablespoon per quarter pound of meat. Then I incorporate the flour evenly and keep it moving. I add salt, pepper or other spice in at this time. The meat should get evenly coated and whatever fat left in the pan should get absorbed (pour off excess fat before the flour is added). Finish the browning process. What you get is the cooked meat coated with the properly browned rue and no oil or moisture left in the pan... a fairly dry product. I let this cool and then vacuum seal in a Foodsaver bag. I generally do a third cup per bag (my estimate at a single serving). To cook, just open the bag (or bags) and heat in a skillet. Once it gets hot add about one-half to two-thirds cups of warmed milk for each bag. For the biscuits we ether use Bisquick mix or if we have a big group and plenty of cooler space we bring frozen biscuits for the Dutch oven. It takes longer to read this than it does to make it on the river. Thank you Keith! For sending in your biscuits and gravy method! I also enjoy a nice cup of joe prepared with the Aeropress coffee maker.
