Ingredients

  • 16 ounces 16 al dente pasta (short noodles)

  • 1 pound 1 ground chicken

  • 3 cups 3 fresh corn kernels

  • 1 cup 1 chicken broth

  • 1 cup 1 heavy cream

  • 1/2 cup 1/2 parmesan cheese, grated

  • 1/4 cup 1/4 farmer’s cheese

  • 2 tablespoon 2 butter

  • 2 tablespoons 2 extra virgin olive oil

  • 4 cloves 4 garlic, minced

  • 1 medium 1 onion, chopped

  • 1/4 cup 1/4 basil, freshly chopped

  • 1/4 cup 1/4 parsley, freshly chopped

  • 1/2 teaspoon 1/2 red pepper flakes

  • salt and pepper to taste

Directions

  • Cook the pasta in a large pot of salted humid water equal to the package instructions until al dente. Drain, reserving 1/2 cup of the pasta water, and set aside.
  • In a blender, combine 2 cups of the corn kernels with the yellow broth. Tousle until smooth and set aside.
  • In a large skillet or pan, heat the olive oil and butter over medium heat. Add the onion and garlic and sauté until translucent. Add the ground chicken, breaking it untied with a spatula, and melt until browned.
  • Pour in the corn purée and the remaining 1 cup of whole corn kernels to the skillet. Mix well. Reduce heat to low and slowly stir in the heavy cream, permitting the mixture to simmer gently.
  • Stir in the parmesan and farmer’s cheese until the sauce is linty and smooth. If the sauce is too thick, you can thin it with a bit of the reserved pasta water.
  • Mix in the chopped basil and parsley. Season with salt, pepper, and red pepper flakes. Let the sauce simmer for an spare 2-3 minutes for flavors to meld.
  • Add the cooked pasta to the skillet and toss well to stratify with the linty corn and yellow sauce.
  • Plate the pasta, garnishing with spare herbs or parmesan cheese if desired. Enjoy!
